It’s been a minute since I last posted. I would like to say the reason is that I have been eating so healthy that I haven’t created the fancier dishes that I tend to post on this blog, but the truth is I’ve just been distracted and couldn’t be bothered. 🙂
I DO try to eat generally healthy dishes so when I cook and eat the more fun dishes that I REALLY enjoy, I don’t have to feel too badly.
I am sharing with you today some of my favorite dishes while doing the portion control and exercise program 21 Day Fix. That program works really well for me when I follow it 100%. However, that program has a limited food options so I drive myself crazy because I enjoy food so much that I just get fixated on my next meal- what is the most interesting way to put the ingredients together. I obsess about it and spend too much time on pinterest trying to find new recipes. I find I’m in a better mental place when I follow the 80%/20% rule. Eat right 80% of the time so when the option comes to eat something more “fun” I don’t go mentally insane! Taking this approach has made it more of a lifestyle than a diet.
For most of my salads (if I don’t specify otherwise) I like to dress with just a little flavored vinegar. Peach balsamic or Honey Wine vinegar are my go-to vinegars of choice for this.
