Today’s recipe is incredibly easy but delicious. There are only three ingredients and it only takes about 5 minutes to make, but the flavor is fresh, complex, and delightful. It’s also only real food so it can be a great side dish for Whole30 or 21 Day Fix. It’s the perfect addition to Thanksgiving to interrupt the heavy carbs of the rest of the plate. It’s also not the soggy salad that so often gets added to the plate to appease the parent’s that will just be ignored and thrown away.
- 1 lb green beans (fresh or frozen)
- Juice and zest of 1 lemon
- Roast or steam the green beans for about 5 minutes until they are slightly cooked but still have plenty of snap.
- Add the zest and juice from the lemon and add salt to taste (I added about 1/4 a tsp of salt).
