“What the crap is that???” You’re probably asking yourself. And for good reason. I told you that reading recipes is one of my favorite pastimes, so when I found this cookbook from the 70’s I absolutely had to go through it.
There were some recipes in the book that might actually be delicious. But there were plenty of recipes that I don’t know how anyone ever thought to themselves “You know what would make a good dinner….” The epitome of the later scenario is this recipe for Sausage ‘n Peach Special.
You know that any recipe that starts off with canned fruit or vegetables is going to be quality. Topping it with brown sugar, broiling it and adding Vienna Sausages on top and we have a winner of a dish!
I didn’t actually have any chili sauce, so to be fair that may have been the component that brought everything together…but I sort of doubt it. However the idea of combining sausage and peaches isn’t necessarily wrong. It might be delicious if done correctly. So I’m re-doing the recipe to make something that humans might actually enjoy eating in the 21st century.
To begin the recipe re-do I first had to ditch the Vienna sausages. My dog was super happy that I made this dish because she got to eat all the Vienna sausages. No one else in the house would touch them though. I swapped that out for some sweet Italian turkey sausage. I grilled them up, sliced them on the bias and laid them on a bed of organic mixed greens. I also had to swap the canned peaches for some fresh peaches. To add to the dish complexity of flavor I grilled the peaches. It adds a nice smokey element to the salad. Instead of the brown sugar I drizzled some 18 year old balsamic vinegar and a little olive oil over everything.
The salad actually turned out really nicely! Plus it is 21 day fix compliant with the turkey sausage so that’s a plus. It felt like it was missing something though, maybe a crunchy component like sunflower seeds. That’s alright- I’ll add them next time.
